After one bite of these lime macaroons, no regular macaroon will ever reach your newly-acquired “golden laced standards” of macaroon excellence.
I am willing to award these macaroons the title of easiest-BenGusto-dessert-recipe-to-date. And, best of all, this recipe was made up on accident while experimenting in the “BenGusto Kitchen” (the gusto kitchen is not so intimidating as it may seem). More on that funny story to follow in the coming days (it’ll come in the form of a “BenGusto™ Disaster”)!
A batch of these easy lime macaroons would work well as a quickly-made party offering, a portable gift, or as a partner to morning coffee. They’re also gluten-free, vegetarian, pescatorian, low-fat, flexitarian, and…. well, you get the picture..
Lime Coconut Macaroons
Level: SUPER EASY Prep Time: 10 minutes Cook Time: 25 minutes Servings: Makes 9 macaroons
- 3 cups shredded, sweetened Coconut Flakes
- 2 extra large Egg Whites
- 2 tbsp. Powdered Sugar
- Juice of 1 Lime
- Zest of 1/2 Lime
- 1/2 tsp. Vanilla
- 2 tbsp. Honey
Preheat the oven to 325 degrees.
Beat the egg whites in an electric mixer fitted with a whisk attachment on high until stiff peaks form (about 3 minutes). While beating, add the vanilla and powdered sugar.
Fold in the coconut flakes, lime, lime zest, and honey.
Plop the macaroons on a pan aligned with parchment paper using a small ice cream scoop.
Bake for about 22-25 minutes, or until golden brown.
