Tired of Coleslaw? Be Daring. Do Red Beet Slaw.

It’s that time again …

I present to you the second post in my August-long guest-blogging series on the blog of La Belle Assiette, the gastrotech startup that I’m working with this fabulous summer  in the private chef industry of Paris! This is actually a really simple recipe I made about a year ago to make beets taste good. (Incredible, right? Beets tasting good … it’s practically unheard of … ) This slaw is refreshing, beautiful in color, and versatile in flavor. It is a new alternative to coleslaw as a side dish or on pastrami sandwiches!
