Pastry Cream made with Almond Flour

This is “BenGusto’s” recipe for a delicious pastry cream unique due to the fact that it is made with almond flour. The almond flour adds a boost of flavor to the classic cream to accompany many different pastry dishes, including BenGusto’s Almond Cream and Apple Tart.

Pastry Cream made with Almond Flour

  • 1 cup Whole Milk
  • 1/4 cup Granulated Sugar
  • 2 large Egg Yolks
  • 2 tbsp. Almond Flour
  • 1 tsp. Vanilla Extract
  • Pinch of Salt

Beat the sugar and egg yolks with an electric mixer. Add the almond flour and salt and mix again.

Over low-medium heat, warm the milk and sugar slowly, continuously stirring, until bubbles begin to form around the edges.

Once the milk is hot, add a few spoonfuls of the the scalding milk to the bowl of the other ingredients that were mixed with the electric beater. Mix the milk in a bit so the entire mixture heats up and adjusts, and then pour everything into the milk pot on the stove.

Continue to heat the cream over the stove on a low-medium heat until it thickens to coat the back of the spoon, about 4 minutes.

Add the vanilla extract at the end. Cover with plastic wrap and chill in the refrigerator. It will keep for 3 days.
